Three Bean Casserole

Ingredients:

8 ozs. Onion - peeled and sliced

3 ozs. Ham- cut into small chunks

1 15.5 oz. Can of Cannellini Beans - drain and rinse

1 15.5 oz. Can of Butter Beans - drain and rinse

1 15.5 oz. Can of Black Beans - Drain and rinse

12 ozs. Peeled Canned Tomato with liquid

2 t. Pomegranate Molasses

Spices: 2 Bay Leaves, 1/2 t. Sea Salt, 1/2 T. Black Pepper

 

 

Preheat oven to 350.  Saute onion in some olive oil in the bottom of a wok. Add Ham and cook a few minutes.  Add all three cans of beans.  Add tomatoes. Add spices and make sure ingredients are on a strong boil.  Place all the ingredients in a casserole dish and bake for 1 1/2 hours.  Total time for this dish is 2 hours: 1/2 hour for heating up ingredients and oven and an additional 1 1/2 hours for cooking.  Using an oven for a single dish is inefficient however if the oven space is maximizedis by cooking bread, and rice, and potatoes and the beans at the same time your carbon footprint goes way up.
