Ingredients:
4 or 5 Medium Onion peeled and coarsely sliced
5 Strips Bacon ( I use antibiotic free, hormone free, etc.)
1 lb. Pasta - Any tubular pasta is fine- Cavatappi is shown in the photo
Grated Parmesan cheese for a topping
No salt or pepper! - You can always add at the end to suit your taste -
1. In a 10" or 12" round sided skillet saute onion in olive oil or medium heat stirring and tossing the onions in the pan frequently. This step takes 20 minutes to turn the onion slices transparent. |
2. Cook the bacon under a bacon press until browned. You want to be able to cut the bacon up into small pieces. Do not drain fat but use in the final step. |

3. Boil water and cook pasta al dente as the pasta cooks just a bit more in the skillet. Meanwhile combine onion and bacon, mix and increase heat in preparation for the last step which is to throw in the pasta all at once and at high heat toss ingredients until pasta is evenly coated and slightly browned. |
4. Finished Stupid Pasta topped with parmesan cheese and served with a brocoli, green pepper, mushroom stir fry. |
